Kicking off the Museum's new Together, at the Table series was a collaboration with Swank Farm for a Florida harvest-themed culinary experience in the West Room, prepared by globally-renowned chef Pushkar Marathe. This 5-course food and wine adventure integrated fresh, local ingredients that spotlighted the diversity of South Florida’s cultural heritage and celebrated the best of Florida aquaculture and agriculture — a mainstay of Florida’s economy fortified by Henry Flagler’s Model Land Company and his Florida East Coast Railway at the turn of the 20th century.

Swank Farm is a 20-acre hydroponic and sustainable farm situated in Loxahatchee Groves, growing over 350 varieties of food and wildflowers. Run by Darren and Jodi Swank, the family farm offers our community fresh produce and specialty goods through more than 25 vendors at their seasonal Farm Market, and supplies specialty produce to restaurants and chefs throughout Dade, Broward, and Palm Beach Counties. Currently entering its 21st growing season and 12th year offering farm-to-table dinners under an impressive, open-air pole barn, Swank Farm grows with the use of no chemicals and offers a Swank Farm CSA program.

Chef Pushkar Marathe is the owner of Stage Kitchen in Palm Beach Gardens. Born in Nagpur, India, Pushkar’s culinary roots originate in his homeland, cooking with his parents in the family's kitchen. At age 20, he began his culinary training in Switzerland and then embarked on a decades-long exploration of international cuisine. He has held cooking positions in the Caribbean, Cayman Islands, across the U.S., and the Middle East. He's worked in mentor Dean Max's restaurants and most recently in partnership with Niven Patel at Ghee Indian Restaurant. The chef, a resident of Jupiter, sources his inspiration from seasonal and regional cuisine.
